Meet Your Dietitians

  • Margret Lyons

    RDN

    Margret graduated with her degree in Nutrition and Dietetics from Bastyr University. She completed her dietetic internship at Good Shepherd Medical Hospital, The Institute for Healthy Living, and The University of Texas Health Science Center, and Snoqualmie School District. With her experience spanning many chronic diseases and conditions, her passion is helping patients find balance and healthy weight during peri/post menopause. Margret uses motivational interviewing in her counseling approach to help patients achieve and maintain their health goals.


    Beyond nutrition, Margret's interests extend to outdoor activities such as running, hiking and climbing local peaks. A former bike racer, she still enjoys leisurely rides, particularly if it means traveling to some place epic! With two of the major marathons, Boston and Chicago, complete her sights are set on getting those last 4 majors done!

  • Joanna Gilbert

    RDN, CDCES

    Joanna is passionate about helping people achieve extraordinary goals through a practice of creating and sustaining necessary behavior and lifestyle changes -- whether facing diabetes management, weight loss goals or achieving a long-sought, healthy, strong, and well-nourished body!

    As a dietitian in both inpatient and outpatient settings, Joanna has thrived in a career supporting people facing a wide range of health challenges -- while working in critical care, NICU/pediatrics, sports nutrition, weight loss, bariatric surgery, and diabetes education.

    Through this experience, Joanna has learned that whether one is facing modest or significant health concerns -- success is always rooted in sound nutrition, mastering daily habits/routines and feeling confident about food choices. She has the skills, experience and passion to help each client create a sustainable plan -- even for the busiest of days, the infamous weeknight dinner dilemma, dining out, or planning for travel.

    Born and raised in Seattle, Washington, Joanna received a Bachelor of Science degree in Nutrition and Dietetics from Bastyr University in 2015. In 2021, she obtained her CDCES, Certified Diabetes Care and Education Specialist.

    When not doing all things nutrition and of course cooking for family and friends – Joanna and her husband Eric love exploring the trails of the Pacific NW right from their backyard in Fall City, Washington.

  • Laura Simmons

    Laura Simmons

    RDN

    Laura graduated from Saint Louis University with her master’s degree in Nutrition and Dietetics, with an emphasis on medical nutrition therapy. Before that, she achieved her baccalaureate degree in Nutrition and Dietetics from the College of Saint Benedict, minoring in Exercise Science and Hispanic Studies. She completed her dietetic internship at Saint Louis University at various organizations throughout the St. Louis area. Laura has practiced in a variety of outpatient settings, including diabetes education, prenatal nutrition/gestational diabetes nutrition education, food allergies, bariatric and weight loss nutrition, GI diseases, nutrition throughout cancer treatment and recovery, and adult acute care.

    Her counseling technique utilizes motivational interviewing to help patients reach goals that are important to them and maintain results over a lifetime.

    In Laura’s spare time, she enjoys playing recreational volleyball and soccer, spending time outdoors hiking and exploring new trails, rafting and skiing, and trying out new recipes in the kitchen.
